Ingredients

Scale

    • 2 boneless, skinless chicken breasts

    • 1 cup breadcrumbs (preferably Italian seasoned)

    • 1/2 cup grated Parmesan cheese

    • 1 teaspoon garlic powder

    • 1 teaspoon dried oregano

    • 1/2 teaspoon salt

    • 1/2 teaspoon black pepper

    • 1 cup marinara sauce

    • 1 cup shredded mozzarella cheese

    • 1/4 cup all-purpose flour

    • 2 large eggs, beaten

    • Olive oil for frying

    • Fresh basil for garnish (optional)

Instructions

    1. Prep the Chicken: Preheat your oven to 400°F (200°C). Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness.
    2. Prepare Breading: In three separate shallow dishes, place flour in one, beaten eggs in another, and mix breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper in the last.
    3. Bread the Chicken: Dredge each chicken breast in flour, shaking off excess, then dip in the beaten eggs, and coat with breadcrumb mixture, pressing to adhere.
    4. Fry the Chicken: In a large skillet, heat olive oil over medium heat. Fry the breaded chicken for about 4-5 minutes on each side, until golden brown and cooked through.
    5. Assemble: Place the fried chicken in a baking dish. Spoon marinara sauce over each piece and top with shredded mozzarella cheese.
    6. Bake: Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly. Garnish with fresh basil before serving.
