Ingredients

  • 2 ½ cups cooked chicken, chopped or shredded
  • ⅓ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • ½ cup diced celery
  • ¼ cup finely chopped red onion
  • ¼ cup chopped walnuts or pecans (optional)
  • Salt and pepper, to taste
  • Fresh parsley or dill (optional, for garnish)

Instructions

1. In a large bowl, mix the mayo, mustard, lemon juice, salt, and pepper
2. Add chopped chicken, celery, onion, and nuts. Stir well to coat
3. Taste and adjust seasoning
4. Cover and chill for at least 30 minutes for best flavor
5. Serve on bread, lettuce, crackers, or as desired

Notes

Storage: Keep refrigerated in a sealed container for up to 4 days. Do not freeze.
