Hearty Taco Soup Recipe

    • 1 can (15 oz) black beans, drained and rinsed

    • 1 can (15 oz) kidney beans, drained and rinsed

    • 1 can (28 oz) diced tomatoes with green chilies

    • 2 cups beef or vegetable broth

    • 1 packet taco seasoning

    • 1 teaspoon cumin

    • Salt and pepper to taste

    • Optional toppings: shredded cheese, sour cream, avocado, cilantro, tortilla chips

Instructions

    1. Cook the Meat: In a large pot, brown the ground beef or turkey over medium heat. Drain excess fat, if necessary.

    1. Sauté Aromatics: Add chopped onion and minced garlic to the pot. Sauté until the onion is translucent, about 3-4 minutes.

    1. Combine Ingredients: Stir in black beans, kidney beans, corn, diced tomatoes, broth, taco seasoning, and cumin. Bring to a boil.

    1. Simmer: Reduce heat and let the soup simmer for 20-25 minutes, allowing the flavors to meld. Season with salt and pepper to taste.

    1. Serve: Ladle the hot soup into bowls and top with your favorite toppings such as cheese, sour cream, avocado, or tortilla chips.
